Daikon is an enormous white mild Japanese radish. It can be eaten raw or cooked and adds a wonderful crunch to salads. In sushi bars it's shredded into a white cloud and served with sashimi. It's essentail to Kim Chi. Low in calories, rich in enzymes, it helps digestion and prevents cancer. Daikon is as good for you as broccoli. It takes on the flavor of whatever it's cooked with. The seeds make spicy sprouts.
This Asian classic is easy to grow, will thrive in almost any situation and matures quickly. It can grow a foot long and as fat as your wrist, though you can harvest it at any stage. Like all radishes, Daikon will grow in most any season in fluffy soil and reliable water. 65 days.
