Yamato Sanjaku is an heirloom Japanese cucumber from the Nara province. Long and narrow, this is the cucumber traditionally used in sushi bars. It yields a generous crop of long, narrow fruit, best harvested when they're young.
The light green skin is slightly prickly, the interior sweet, crisp and white with few seeds. Yamato Sanjaku is perfect for sushi as well as Sunomono, cold cucumber salad. Recipe available on request. 75 days.
